I guess my picture this week can be of the dinner I made last night... Jumbo stuffed shells from Real Simple. It was actually pretty easy. It took a little longer than I was expecting because the shells are so big and thick that they took a while to cook. I found that it was much easier to pipe the stuffing into each one rather than trying to spoon it into the shell. All I did was put the stuffing into a gallon-sized plastic bag then took off a little of the tip, and ta-da, piping bag!
Anyway, I recommend the recipe. I know we'll be using it again. Although I think I'll up the savory factor on the cheese. Next time I'll add some garlic, maybe some finely minced onion or shallot, and probably some basil as well. Even though it was good I felt it needed *a little* more flavor.
